Ingredients:
500 grams of okra (bhindi), washed and chopped
2 tablespoons oil
1 teaspoon cumin seeds
1 large onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Instructions:
Prepare the Okra:
Wash the okra thoroughly and dry them completely using a kitchen towel. Chop off the ends and cut the okra into 1-inch pieces.
Cook the Okra:
Heat 1 tablespoon of oil in a large pan or skillet over medium heat. Add the chopped okra and sauté for 8-10 minutes until they are tender and slightly crispy. Remove the okra from the pan and set aside.
Prepare the Masala:
In the same pan, heat the remaining 1 tablespoon of oil. Add cumin seeds and let them splutter.
Add the chopped onions and sauté until they turn golden brown.

Sprinkle garam masala over the cooked bhindi and mix well.
